Southeast Asian Tomato Salad

This salad is a great way to mix up the usual tomato and basil summer salad.

Southeast Asian Tomato Salad (from Cook This Now)

2 tsp fish sauce
2 tsp lime juice
1 tsp light brown sugar
2 scallions, finely chopped
1 garlic clove, minced
1/2 jalapeno, finely chopped
3 medium tomatoes, sliced 1/4" thick
1 cucumber, thinly sliced
2 tbsp chopped Thai or regular basil
2 tbsp chopped cilantro

1. In small bowl, whisk together fish sauce, lime juice, sugar, scallions, garlic, and jalapeno.
2. Arrange tomato and cucumber slices on a plate. Spoon dressing over tomatoes and let stand 10 minutes.
3. Sprinkle with basil and cilantro and serve.
